You could test that hypothesis by checking people's blood sugar. Depending on whether you're trying to show a short-term or long-term effect, you could either have people divided into experimental and control groups with regard to GMO consumption, and test whether their average blood sugars differ over the long-term, or you could check after each meal and see whether the presence/absence of GMO foods made a difference. It would be difficult to eliminate lurking variables in the second case, but if you had people report all the foods/drinks they ingested, you could at least correlate the blood sugar measurements with the various components of their diets. If there was no difference that wasn't better explained by other components of their diets, then you might be able to make a case that the GMO food was a possible explanation.
