A poem can be many things. Traditionally a poem had rhyme and meter meaning the words of every two lines or every other two lines. There are many types of poetry: Haiku, Free Verse, Sonnet, Acrostic, Epic, Ballad, and many more. A stanza is simply a break between thoughts in a poem.
This assignment seems to be asking more for your emotionally expression rather than a demonstration of a poetic form. Only you know someone you love and your feelings for them you'd like to dedicate to them in writing. Someone you love, living, dead or imagined. This could be a family member, a romantic figure or someone in public life you admire. Begin with the strength of your emotion and allow the words you feel to flow. Write them as the come to you. Only then edit. Don't edit yourself as you write but first concentrate only on expressing your feelings. Editing to remove redundancy and choose only those words necessary is the true art of a poet. Poetry is best when not word can be added or taken away without detracting from its meaning.
An example of a three stanza poem dedicated to someone you love written in free verse would be:
Everyday as a second apart.
It’s never enough...
with the little seconds
left on the clock,
I better make it count
and say the very words
that’s worth more than a second.
I love you
as long as a lightning second
travels to a second.
As short as 24 hours
becomes a day
in many months.
My calendar
has only one schedule,
and it’s to love you
a second longer.
