Every plant is unique; so are their fruits and seeds. The endosperm of the coconut fruit is very aqueous and unlike that of the bean or pea is not completely absorbed at maturity. In the early stages of development the endosperm of the coconut fruit is suspended in the water. As it matures, it is deposited into the pulp and the water is left behind in the hollow center.
