For anatomy, I think spaced-repetition is fundamental. Using apps like Anki can be useful for having a structured approach to spaced-repetition. The key aspects to memorize in anatomy are function, blood supply, innervation, and structure identification, which involves recognizing regional landmarks and relationships between structures.
For physiology, try to understand the mechanisms of individuals systems and how they relate to the organism as a whole. Test yourself by asking yourself what would happen to an individual system if there was a disruption to homeostasis (e.g., how would the kidney respond to a hemorrhage ie a loss of blood volume?
