Let's start with one of the most basic poetic techniques: meter. A quick scan of the first, third, fifth and seventh lines of each stanza reveals that they observe "iambic heptameter" (7 iambs per line). An iamb is an unstressed-stressed foot and if you think about it, a poem about a wild gallop down some almost impassable mountain gorges might have the feel of iambic heptameter: da dum, da dum, da dum, da dum, da dum, da dum, da dum. (The caesura, or pause, in the middle of many of these lines might also mirror the stop-start of a horse chase). Please let me know if you need more help with this.
