"Letter 'H' Words" is the grammatically correct phrase of the two.
You could also say "words that begin with the letter 'H'".

When we talk about words that begin with any given, specific letter of the alphabet, we refer to that letter as "The letter 'H'" (in this particular case) as opposed to "The 'H' letter". Therefore, when we categorize words that begin with the letter 'H', we refer to them as a group of "Letter 'H' words".
