It really could mean anything. You didn't give a lot of context here, so the meaning is vague. I personally would not call someone's name "very interesting" and have that be the end of it, as it could easily be understood as rude because sometimes people say "interesting" when they actually mean "weird". Maybe in some contexts, calling a name "very interesting" could mean the speaker wants to hear the story behind a unique name, or maybe simply that they had not heard the name in question before. Many names have long histories and famous bearers, and that is also potentially very interesting.
