The dictionary definitions:
Both adjectives "stimulating" and "interesting" are synonyms.
However, the adjective --stimulating-- describes a sensory or an emotional feeling.
For example, a very stimulating conversation--is capable of exciting or arousing the emotions.
The adjective-- interesting--on the other hand, does not usually arouse the emotions.
Instead, a very interesting person describes someone who is capable of holding
your-- Attention-- by being amusing, appealing, etc.
