They are "very different" Raychatu! Simply put, there is no particular significance to the word "very" in either case (or in fact in any case). in this case it is simply an adverb describing an adjective, "interesting". One could use any similar adverb (extremely, immensely etc) in it's place without changing the meaning.
So the question becomes, is there a diference between "interesting", and "exciting".
Of course! "Exciting" means causing/inciting strong enthusiasm or arousal or an increase of energy. (In technical or scientific terms it refers to the increased energy of any physical or biological system, ie the electric current in a circuit, etc)
"Interesting" means holding or capturing attention or curiosity.
It's somewhat similar
consider using a more specific word in either case. For example, Instead of "very interesting", say "Engrossing, bewitching, mesmerizing, or at least 100 others".
