So I won't write the essay for you. But, the first thing you need to do once you pick a side (either Jorge is or is not a victim of prejudice) is consider the why. In choosing either side, you'll need to have some reasoning behind it. So, start with yourself: what do you know about Jorge? What are your thoughts/associations about people with the name Jorge? What are your thoughts/associations about janitors? Answering those two questions for yourself might end up expanding into your supporting paragraphs.
