I'd approach this by first thinking of what stood out for me during the last semester and what my dominant impressions are. Were there any funny incidents? Any frustrations? Any disappointments? Any successes?
A descriptive essay should include as much description as possible. Your first sentences in the report should place the report (often by restating the prompt). You can also use a general statement along the lines of "In the spring of 2020, the Covid-19 pandemic forced many universities to close campuses and turn to online instruction. In the fall, many institutions tried to resume in-person instruction with varying degrees of success. Some tried hybrid or online-only models (and then continue into your institution).
To organize your work, group the incidents you listed according to their dominant characteristic and then describe some of your best observations for each).
Be sure to look at what length the report should be. That will determine the level of detail.
