My recipe for one dozen delicious crêpes is easy to make. To start, place three eggs in a blender, one cup of milk and half a cup of water. Add two tablespoons of olive oil, one tablespoon of sugar, and half a teaspoon of salt. Next add one cup of flour and blend it for thirty seconds. Refrigerate for one hour. Use a non-stick frying pan on medium high heat. When the pan is hot, add approximately one-quarter cup of batter (depending on the size of the pan). Spread the batter over the entire surface in a thin layer by tilting the pan. Set the pan back on the element to cook. Cook one side until bubbles form and the surface appears dull. Turn the crêpe over and cook until the crêpe is golden brown. Remove it to a warm plate and cover it. Crêpes are best served hot, filled with jam, fruit or yogurt. Another way is to sprinkle with orange or lemon juice and sugar or fill with a savory filling like cheese. To prepare, place the filling in a line down the centre of the crêpe then fold the crêpe over the filling and serve.
