Yes you are thinking correctly. There are lots of other examples of how the plot deepens but you are on the right track.
The climax would be towards the end of the novel when Nancy is murdered for sharing Monk's plans with Oliver's guardians, Mr. Brownlow finally gets to hear Oliver's origins from Monks, Fagin is caught and executed, and Sikes dies. The climax is followed by Oliver living happily and peacefully with his new family.
