I agree with both answers. I would also like to add that "very" and "interesting" are both overused adjectives. English teachers often counsel their students to use more descriptive, more specific adjectives to make their writing more interesting.

I completely agree with Katlynn's answer. I would just like to add one thing. Even though there is a difference in intensity, both expressions could be considered equal in an English language test using multiple choice answers, especially if the other options are much less suitable.

In other words, they essentially mean the same thing. However, “extremely fascinating” is a stronger version of “very interesting”.
