The first two are the best.. "To" is succinct. "Unto" says the same thing but is a little more formal and slightly archaic. "Into" isn't correct, because it implies a finite thing and posterity is not only time but infinite time. Something could last "into" the next year, but not "into" posterity. You could use "for" but it would make the sentence even more redundant than it already is.
Legacies are something that are bequeathed, so to say a legacy was bequeathed is redundant Legacies are expected to be lasting, so "posterity" is also redundant. So the sentence basically is:
It is a given lasting remembrance she has given to be lastingly remembered.
