Hi Julien! In my experience with dealing with editors, and in my time as an editor, myself, I can say that the only times they/I ever completely rewrote something was if there was something wrong with the sentence structure, or if it didn't sound natural. Whenever this came up, though, my editor would always put the situation before the correction. For example, she might write something like: "Sentence doesn't make sense - reword it - try something like: __________", and I do the same. It might be worth it to get a sample edit from a few other people, just to make sure that you find the editor that's the right fit for your job.
