I don't understand enzymes?

In honors Biology we learned about enzymes and substrates, but I don't understand how it all works. Could someone explain it to me?

There is so much to say about enzymes, substrates, active sites, inhibition, etc. I'll give you this general overview:

Enzymes are proteins that act as a biological catalysts, meaning they speed up the rate of the reaction without undergoing permanent chemical change. A good enzyme is stereo-specific for a substrate or a number of related substrates. A good enzyme is also high-yielding, and without side products.
