Eukaryotic cells are defined by the presence of a membranous nucleus, as well as membrane bound organelles. Animal cells, with the exception of red blood cells, contain at least one nucleus, in addition to many membrane bound organelles (mitochondria, for example). As such, animal cells fit the definition of eukaryotes.
