The reason you subtract 23 from both sides is to isolate the variable, x. By having x by itself, you have answered the question, "what value of x will make this equation true?"
Beyond that, the only reason for doing it is to learn and understand the underlying logic of using arithmetic to solve basic algebra. But it is far from being a pointless exercise - basic math like this and beyond is used in virtually all levels of business and science. Even if you do not go that route in your career, understanding the basic logic required here will be valuable in many aspects of your life.
