Interphase is the time when a cell is doing its job. Let's pretend we are talking about a skin cell. During interphase, that skin cell is doing its job of being a skin cell which means it is protecting your body from outside invaders. During this time that cell will need to grow to protect your body and it will need to obtain nutrients to keep growing. Right before the cell starts dividing, it will also need to duplicate its DNA to make another skin cell with the exact same DNA.
That means the one thing that does not happen during interphase is: cell division.
