I understand that an enzyme is needed to break down the glucose in sugar into carbon, hydrogen, and oxygen but I can't find any source to tell me a name.

Carbohydrates are composed of carbon,hydrogen and oxygen molecules. They combine with each other and formed macromolecules and they formed with the presence of enzymes.
