Hello! A common aspect of microbiology that is forgotten about is your digestive system. In our gut, we have an abundance of different bacterial communities that have a role in digestion of the different macromolecules (proteins, fats, carbohydrates).
Regarding the digestion of dairy products, we need what is called the lac operon which is a group of genes in bacteria that help us break down the lactose found in dairy products. With deficiencies of the associated bacteria and lac operon, individuals may become sensitive or intolerant to dairy products.
