Lime is definitely used more than lemons in Latin cooking. However, lemons are bigger in Meditteranean cuisines.

Hi there! Latin cuisine is really varied, even within a single country you will find distinct regional differences. Where I studied in Central MX it is not at all common to see lemons used in cooking - but limes are hugely important! My host family was actually surprised that I liked both lemon and black pepper - they couldn't stand either taste.

Lemon is not very common in Latin meals, we use more lime to add flavor, to preserve some fruits and vegetables to become oxidized.

More than lemon, I will say lime! Lime is a really traditional Latin flavor.
You use it on fruits, fishes, rice, to make natural lemonade, and to preserve other fruits. For example, if you cut an apple, you put lemon on it to avoid it oxidized.
