Rabbits with brown fur have a disadvantage in an area that is snowy because they are easier to spot by predators.

So, rabbits with brown fur die out, and rabbits that show lighter/white fur ( from a mutation) will survive and reproduce. Given enough time, natural selection will "select" white fur and most (if not all) rabbits in that area will have white fur.
