I think the best way to hypothesis is less looking individual psychology, it makes more sense to look at the collective social influence. So one reason to that understand why certain activities happen more at night need to take into, the social and legal consequences of said activity, the cultural and economic complexity of that society. A simple explanation is that most people work during the day with has restriction on what can and cant be done. So activities that aren't allow or take up a significant amount of time are only available at night.
