Well, an oak tree is a Deciduous tree and therefore can't "decide" to keep the leaves or let them go (how I explain to students). So every year, in the fall, deciduous trees "decide" they want to change their colors from the greens to browns. Then, they decide they don't like the new colors and get rid of all their leaves during the winter (It's like they are bald).

If you don't live in the Northern United States, this question can be tricky! Think about pictures you have seen showing fall and showing winter. What do people usually draw?
For fall, they usually will draw a tree with colorful leaves. They might be yellow, orange, red, or even brown. If you have never seen this, consider looking up pictures of trees in the fall.
For winter, they usually will draw a tree that has no leaves at all! Often, they will draw snow surrounding the tree and the tree will look dead or sleepy.
So what happened from fall to winter? Something you may notice in some of the pictures of fall is leaves on the ground. Not only do the leaves change color in fall, but they also begin to fall off the tree. So by winter, all the leaves have fallen off of that oak tree.
In summary, a major change that happens to oak trees from the fall to the winter in New York is that the leaves fall off the trees. This is because oak trees are a kind of tree called "deciduous trees". That is a fancy word for trees that lose their leaves in winter.
Be careful! Not all trees are "deciduous". Some trees are called "evergreen trees". These trees keep their leaves all year round. One example of an "evergreen tree" is a pine tree (the kind people use as Christmas trees). It's leaves will still be green and beautiful through the whole winter.
