Please know that your fear of speaking in public is quite common, especially but not exclusively in the academic environment. As a former special education teacher who wrote curriculum and taught continuing education courses to regular education teachers, I often found myself second-guessing what I was saying. Why? Because audience member has a different level of expertise, and I wanted to make sure I didn't bore some while taking others higher than they wished to go!
Toastmasters, Intl to the rescue! This 100-year-old public speaking organization has individual chapters throughout the US, as well as throughout the world. Google your nearest chapter. Attend a lunch or evening meeting. And watch the magic unfold. Good luck!!

There are some relaxation techniques, such as breathing exercises) that can help with normal stage fright/nerves. What you are describing sounds a bit more like an an anxiety attack, and it sounds like it's creating a cycle where you have even more anxiety over the fear of another attack. There are different techniques for dealing with this type of anxiety, and you might be better helped by a counselor or psychologist (or even hypnotherapist) over a public speaking coach.
