The pancreas is responsible for producing digestive enzymes that release into the small intestine to break down carbohydrates, fats, and proteins. The pancreas also produces a bicarbonate to neutralize stomach acid, which burns into anything it touches. The pancreas also produces insulin, which regulates blood sugar.
