It happens because of  the transfer of thermal energy which is the transfer of heat from a warmer object to a cooler object. In this case, thermal energy (heat) is transferred from the air to the glass of ice water.  This transfer continues until equilibrium is reached, at which point the temperature of the glass of water equals the temperature of the surrounding air.
