Lipids are polar molecules, they have a globular head and filamentous tail. Polar molecules have negative and positive charge and they arrange themselves based on that. For example lipids bond with phosphate molecules creating a phospholipid bilayer of cell membranes where all the globular head of lipids are on outer surface of the membrane, their polarity determined by their charge allows their heads to adhere with each other.
Hope this helps.
