Starch is not digested in the stomach because the enzymes that break down starch are not present in the stomach. Digestion of starch starts in the mouth as the food mixes with saliva containing the enzyme amylase that breaks down starch. Starch is further digested in the small intestine by the action of pancreatic amylase and then by maltase.
In the stomach, acid denatures the proteins and the the enzyme pepsin secreted by the stomach breaks proteins into smaller peptides which are further broken down into amino acids in the small intestine by the action of enzymes such as trypsin, chymotrypsin and peptidases.
