I agree with Oscar A. that shake is probably a corruption of check, and not all to be unexpected in the writing of not only someone whose native language is not English (and thus may have trouble distinguishing certain English consonants and vowels and how to write these) but also someone whose native language does not employ the Latin alphabet for writing. But I'd like to know the source of the entire sentence; I have a suspicion that it's a written transcription of something spoken, and if true the original sentence may have been "Payment can be made by check and cash," which is a little unusual since most English speakers would probably say "Payment can be made by check or cash," i.e., designating two alternative rather than complementary forms of payment. But if the original was indeed ""Payment can be made by check and cash" then, as is quite common if not predominant in the spoken language, the and may have been pronounced as a reduced [n] (often written as in "eye dialect" as 'n) which is also how the little preposition in may sound in speech, again especially to a non-native speaker.
