You will want to include a hyphen in nerve-cancer interaction.
You would only need an em dash if the cancer interaction in question were to serve as an elaboration of the nerve in question. I.e. "I seem to have a funny feeling in my nerve--cancer interaction in play." (Here, the cancer interaction briefly identifies and explains the person's funny feeling in their nerve.)
