You are close in each of your two options above.
But the correct way to word your thesis statement should be as follows (with one hyphen between climate change and impacts):
The assessment of climate change-associated impacts
You only need one hyphen as indicated above because "climate change" is a two-word term so we needn't hyphenate "climate-change" accordingly.
