There may not be an exact term for 'the Star Wars style' but a good jumping off point would probably be Retro-Futurism. There are a lot of different elements to the series, from Samurai and Cowboys to Dogfighting and Trench Warfare. Artistically this comes together in a lot of contradictory ways.
If you are looking into specific art styles that influenced the movie you should look into the early concept art. There is German expressionism, art deco, steam punk, gear punk, the list goes on. You can also look at the props and sets they created. Blasters were made from real guns. Lightsabers were cobbled together from old camera parts. They used all manner of mechanical and electrical widgets to create interesting visuals.
When you are trying to pin down what kind of style a particular piece can fit in you should think about all of the different styles that influenced it. You should also look for contemporary work and think about whether it was following the current trends or doing something more novel. Stylistically most of the sequels relied heavily on the first movie's style but each added a bit here and there. You could also examine how aspects of the style did or didn't change over time.
