For the most part, this stuff is less than scientific. This is because the meaning of flying may be different to two different people; flying high up in the air may terrify one person and be a sign of doom while flying high up in the air may be normal to someone who is a pilot and could just be a sign of everyday life. With your example, if someone is scared of birds, they may have a dream that is anxiety-based around birds, but someone who loves birds (like me! :)) may have a happy dream about them. People are still studying dreams, and this research could be important, but for now, we'll acknowledge that you can interpret your seeing of things in dreams any way you like :).
