For connecting sentences with adjectives, it seems the te-form of the adjective has to be used, but can と be used as well?
これは大きいときれいです。
これは大きくてきいれいです。
Are both of these correct?
Does it make a difference if と is used to connect to related items when they are not nouns?

と is for nouns - いぬとねこ
くて is for い-adjectives - かわいくて
で is for な-adjectives - 元気で
You can mix and match: 今日、かわいくて元気な(元気でかわいい)いぬとねこと遊びました。Today I played with cute and energetic (energetic and cute) dogs and cats.

No, when connecting sentences with adjectives, くて has to be used instead of と. と is normally used to connect nouns. Other than that, it would depend on what the word category is as い-adjectives would use the くて form, whereas the な-adjectives would just add で at the end of the adjective to form the conjunction (eg: 静か becomes 静かで).
