So from the instructions it say to conjugate each of the verbs using the preterite tense (past simple) to describe each vacation in full sentences. There are no vacations listed in the example above so I'm going to assume that we will make up an example for each of the above listed verbs.

1. yo/ pracitar = practiqué (irregular)
Yo practiqué la guitarra todo el viaje. I practiced guitar the whole trip.
2. mis amigos y yo/ organizar = organizamos (regular)
Mis amigos y yo organizamos un recorrido de la ciudad. My friends and I organized a tour of the city.
3. elena y felipe / acampar = acamparon (regular)
Elena y Felipe acamparon cerca de San Francisco. Elena and Felipe camped close to San Francisco.
4. lourdes/ escalar = escaló (regular)
Lourdes escaló una montaña muy bonita. Lourdes climbed a very beautiful mountain.
5. nosotros / comprar = compramos (regular)
Nosotros compramos un boleto de ida y vuelta. We bought a round trip ticket.

One thing to note is that frequently in Spanish speaking countries, the subject pronoun isn't used. These include yo, tú, él, ella, usted, nosotros, vosotros, ellos, ellas, ustedes. This is because the conjugation of the verb tells us who the subject is most of the time. For example, in #1 we have 'yo practiqué'. In this example we could just say 'practiqué' because the 'yo' is implied with the conjugation. This is the way that you would speak in a Spanish speaking country, however if you are taking a class they may want you to include the subject pronoun. In that case don't omit it.

The verbs in these sentences need to be conjugated in the preterite using regular -ar preterite endings, which are -é, -aste, -ó, -amos, -asteis, -aron. Be careful with the first one---the "c" will need to change to a "qu" to keep the hard consonant sound (like a "k" in English). Give them a try....I'll be happy to provide feedback!
Q: How are the preterite endings for IRREGULAR verbs (e.g. venir, saber, tener, querer) different from the AR, ER/IR endings for verbs that are REGULAR in the preterite??
A: Verbs that are irregular in the preterite use a unique set of endings--or a 3rd set of preterite endings. First of all, none of these endings have accent marks. Secondly, the endings are a mixed bag pulled from the AR endings and the ER/IR endings. Specifically, the 3rd set of preterite endings for IRREGULAR verbs are:
e, iste, o, imos, isteis, ieron.
Demonstration by verb--an AR verb, an ER verb, and an IR verb--but all take the same endings.:
AR VERB- ESTAR: estuve, estuviste, estuvo, estuvimos, estuvisteis, estuvieron
ER VERB- SABER: supe, supiste, supo, supimos, supisteis, supieron
IR VERB- DECIR: dije, dijiste, dijo, dijimos, dijisteis, dijeron (* "i" is dropped after "j" to deliver a smooth sound)
