Why do acknowledgements often come at the beginning of a book? Wouldn't after the book, when we have the experience to actually care about what went into making it, be better?

How about Not reading the acknowledgements until after you have read the book, and liked it? It doesn't matter where they are located. I also read the the last page of the jacket first.
