Word for a small taste of drink?

My Italian family members will use a word that sounds like "spudatza" to refer to a small taste of a drink."Would you like to try this wine?""Just a spudatza"What word is this?

They probably say “sputazza”, which is a regional variant of the word “sputo” (spit), to mean a small shot of a drink. The English equivalent could be “smidgen”.

As it pertains to a small taste of wine .... my suggestion would be to ask for small glass or wine ('un bicchierino di vino'). This would be like asking for a shot of win, but you can always substitute the word 'vino' for another drink. BTW ... The word 'spudatza' is probably a dialect from the native town where your relatives grew up.
