Hello! I've been a part of a few university hiring committees, so I'd love to answer your question based on my experience on these committees.
If you don't have student or peer evaluations of your teaching ability, I would ask for feedback from the person who invited you to guest lecture. Since you've been approached to teach, you could use that feedback (similar to a letter of recommendation) as "evidence" if that person comments on your ability to communicate to an audience and address questions with expertise.
