There are no modern countries that fully implement Torah law as their national legal system in the way that some countries apply Sharia law. This is not to say that the Torah or the entirety of the Tanakh has not influence society, it has and in many ways, more than Sharia Law has. The closest and probably most obvious answer is Israel. While they are ruled by a more secular government, there are still Jewish Rabbinical Courts that handle marriage, divorce, and some inheritance cases for Jewish citizens. However, when it comes to criminal and civil law, Israel follows a secular system that is based more on British common law and modern legal principles than the Torah.
So, while no country enforces Torah laws like stoning for adultery or sevenfold restitution for theft, some legal principles have made their way into modern systems.There is the idea of repaying theft multiple times over like we saw in Exodus 22:1, many courts now would consider that to be punitive damages. While its difficult to find modern countries that do follow Torah in its totality, there are Orthodox Jewish communities that have traditions like the Ketubah that are still practiced, but these are community customs, and not national laws.
