Let x = gallons of 21% butter fat ice cream

Then, 60 - x = gallons of 15% butter fat ice cream

(x)(21%) + (60-x)(15%) = (60)(19%)

21x + 900 - 15x = 1140

6x = 240

x = 40 gallons of the 21% butter fat ice cream

plus 20 gallons of the 15% butter fat ice cream (60 gallons - 40 gallons = 20 gallons)
