The difference between the Good Nutrition Eatery's income and the Greasy Spoon Diner's loss is the profit of the Eatery plus the loss of the Diner. We add these two numbers, because the loss of the Diner's income can be thought of as -$10,400 and the profit of the Eatery's income can be thought of as + $20,500. This means, the Diner not only didn't earn the $20,500 that the Eatery did, but they also lost $10,400, therefore to find the difference we add the two given numbers.
