The Galapagos Island is the location in which Darwin noticed the various species of finches. If you are going to discuss evolution, you should know some of the basic developments of the idea. Have you even read a critique of Darwin?
 
Also, observable, by whom? Is there any observable evidence of atoms or the nuclei? If you were trained in evolutionary biology, you would be able to observe things that pass your notice today.

The finches beaks changed, but they remained finches. That's called adaptation, not evolution.

An adaptation is a short termed change to suit habitat or enviroment. Evolution is the theory of long term process where genetics change. The finches genetics did not change. 
By observable I'm talking about evidence you can see. Scientific evidence today that I can see.
