I would like to shorten "foodborne and airborne diseases" to "food- and airborne" diseases but I'm not sure what the proper syntax would be.

Hi Laura,
You were very close! In this case, you would say, " food and airborne diseases" with no dashes. Food and airborne characterize the noun "diseases" and play the function of adjective. Hope this helps.
Best wishes,
Nadia
