"Po" di "un po" si scrive con l'apostrofo, perché non è nient'altro che il risultato del troncamento di "un poco".
Come ricordarsi? Beh, pensa all'apostrofo come una lacrima: "po" è triste perché ha perso "co", quindi piange aggiungendo una lacrima al posto di "co".
Esempio:

R: "Eh, un po'!"
