In binomial probability, N is the number of times that the trial is run. While we will only write down the cases where the final flip is heads, these are not the only cases that existed. As many times as you engage in an attempt to flip a coin eight times and have the last flip land heads is the number you will get for N, as it is the number of times you attempted to get a "success" trial, which is in this case when the last coin flip lands heads.
