The Columbian Exchange helped spread new crops, livestock, natural resources, culture ideas, and people throughout the new world, which means there was more stuff, more wealth, and more reason for the European countries to keep growing their existing colonial empires.
As for the European Union, both World Wars caused incredible destruction throughout Europe, and the cost of rebuilding was/is incredibly high. It was better for most of those nations to be part of one larger economic and monetary system, rather than having several small ones, which might have fallen apart during tough economic conditions. Having the safety of one bigger, stronger economy helps protect those countries (and their people) from economic disaster.
