For most of it's communications, WeChat uses a proprietary encryption protocol, as MMTLS.
As for Whatsapp, it uses a customized version called the open standard Extensible Messaging and Presence Protocol (XMPP).
Cell phones/smart phones use SMS ("Short message service"), or commonly more well known as "text messaging", which uses Short Message Peer to Peer (SMPP) protocol. They use this to communicate with phone operator gateways. SMPP send and receives messages to and from GSM, UMTS, iDEN, CDMA, and TDMA phones. This is actually a level-7 TCP/IP protocol, which can send messages at a very fast rate.
